The exterior of the Precious Black Truffle is characterized by a rough, warty surface. It’s inside, however, where the magic truly lies. When cut open, it reveals a rich, dark color, almost black, with white veins running through it, creating a striking contrast that is as visually appealing as it is delicious.

Black Summer Truffle

Bianchetto Truffle

The Bianchetto Truffle, also known as ‘Tuber Borchii’ or ‘Tuber Albidum Pico’, is a prized truffle variety that offers a distinctive and robust flavor. Harvested in the winter and spring months, it’s considered a delightful alternative to the more expensive White Truffle.

The Bianchetto Truffle has a smooth, light skin, often with a pinkish hue. Inside, it reveals a varied color palette ranging from white to reddish-brown, interspersed with white veins that become more pronounced with maturity.

While smaller than other truffle varieties, the Bianchetto Truffle is big on flavor. It has a strong, garlicky aroma, and its taste delivers an intriguing mix of sweet and spicy notes, adding depth and complexity to any dish.

Uncinato Truffle

The Uncinato Truffle, or Tuber Uncinatum, ripens in the Autumn-Winter season and is known for its high organoleptic qualities. It can reach a considerable size and is often described as aesthetically perfect. It is very similar to the Summer Truffle (Tuber aestivum), but it has less large warts, a much darker gleba (the inner part of the truffle), a stronger and more pleasant scent, and a more marked flavor.

Its outer skin, or peridium, is black with underdeveloped warts. The Uncinato Truffle develops in the same areas as the summer truffle, usually in cool areas. The harvesting period is from October to mid-March.

The Uncinato Truffle has a delicate and pleasant scent, and its taste has been described as more intense and flavorful than the black summer truffle. It can be used to garnish dishes, giving them elegance and a unique flavor.
